This Cheesy Rotel Ranch Queso is a creamy, meaty, and zesty dip perfect for parties or casual snacking. It combines Velveeta, Rotel tomatoes with green chilies, ranch seasoning, and ground beef or sausage into a warm, scoopable delight that’s quick to make and always a crowd favorite.
Ingredients
16 oz Velveeta or processed cheese block
10 oz Rotel tomatoes with green chilies (1 can)
1 oz ranch seasoning mix (1 packet)
1/2 lb cooked ground beef or sausage
4 oz cream cheese
2 tbsp chopped fresh cilantro (optional)
Instructions
1. In a skillet over medium heat, cook ground beef or sausage until browned. Drain excess fat and set aside.
2. Cube Velveeta and cream cheese, then add to a non-stick saucepan or skillet over low heat.
3. Pour in Rotel (do not drain) and add ranch seasoning. Stir to combine.
4. Return cooked meat to the pan and mix thoroughly. Stir occasionally until fully melted and well blended.
5. Transfer to a serving dish or crockpot and serve warm with chips or toppings of choice.
Notes
For a spicier kick, use the Hot variety of Rotel or add diced jalapeños.
Keep the dip warm during serving using a mini crockpot for best consistency.
Stir in a splash of milk when reheating to restore creaminess.
