Ingredients
1 lb sirloin or ribeye steak, cut into bite-sized pieces
2 tbsp olive oil
2 tbsp salted butter
4 cloves garlic, minced
8 oz linguine pasta
1 cup heavy cream
1 cup grated Parmesan cheese
Salt and black pepper, to taste
2 tbsp chopped parsley (optional)
Instructions
1. Pat steak dry and cube it. Season with salt and pepper, then rest at room temperature.
2. Cook linguine in salted boiling water until al dente. Reserve 1/2 cup pasta water and drain.
3. Heat olive oil in skillet over medium-high. Sear steak in batches until browned on all sides. Add butter and garlic; cook briefly, then remove steak.
4. In a saucepan, warm cream over medium-low. Stir in Parmesan and pasta water until smooth. Season to taste.
5. Toss linguine in cheese sauce. Plate pasta, top with steak, and garnish with parsley.
Notes
Use freshly grated Parmesan for the smoothest, richest sauce texture.
Don’t overcrowd the skillet—steak sears best in batches for maximum caramelization.
