Ingredients
2 chicken breasts
2 tablespoons Cajun seasoning
12 ounces bowtie pasta
2 tablespoons olive oil
3 tablespoons butter
4 garlic cloves, minced
2 cups heavy cream
1 cup Parmesan cheese, grated
1 cup mozzarella cheese, shredded
2 tablespoons fresh parsley, chopped
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Pat dry chicken breasts, season with Cajun seasoning, and sear in olive oil over medium-high heat until golden and fully cooked. Slice and set aside.
2. Boil the bowtie pasta in salted water until al dente. Drain, reserving 1 cup of pasta water.
3. In a skillet, melt butter and saute minced garlic until fragrant. Pour in heavy cream and simmer. Stir in Parmesan and mozzarella until smooth. Season with salt and pepper.
4. Toss the pasta with the Alfredo sauce, adding a splash of pasta water as needed to loosen.
5. Top with sliced Cajun chicken and garnish with chopped parsley. Serve hot.
Notes
For extra heat, add a pinch of cayenne or red pepper flakes.
Reheat leftovers gently with a splash of cream or milk to bring back the sauce’s silkiness.
Make it vegetarian by swapping the chicken for roasted mushrooms, zucchini, or bell pepper.
