Description

Cheesy Funeral Potatoes are the ultimate comfort food casserole—creamy, cheesy, and topped with a buttery cornflake crunch. Perfect for holidays, family gatherings, or weeknight dinners, this easy dish brings everyone back for seconds.


Ingredients

1 (32 oz) bag frozen cubed hash browns

2 cups sour cream

1 can (10.5 oz) cream of chicken soup

2 cups shredded cheddar cheese

1/2 cup finely chopped onion

1/2 teaspoon garlic powder

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 cup melted butter, divided

2 cups crushed cornflakes


Instructions

1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch casserole dish.

2. In a large mixing bowl, combine sour cream, cream of chicken soup, garlic powder, salt, pepper, and 1/4 cup of the melted butter. Stir until smooth.

3. Fold in the hash browns, chopped onion, and shredded cheddar cheese until everything is well coated.

4. Spread the mixture evenly in the prepared casserole dish.

5. In a separate bowl, mix the crushed cornflakes with the remaining 1/4 cup melted butter.

6. Sprinkle the buttery cornflakes evenly over the top of the casserole.

7. Cover the dish with foil and bake for 40 minutes.

8. Remove foil and bake uncovered for an additional 10–15 minutes until the top is golden and crispy.

9. Serve hot and enjoy!

Notes

For best results, use freshly grated cheese—it melts smoother and has more flavor than pre-shredded versions.

Add chopped cooked bacon or ham to make this a more filling one-dish meal.

To freeze: assemble but don’t bake; wrap tightly and freeze up to 2 months. Thaw overnight in the fridge before baking.
