Description

Cheesy Beef & Frozen Potato Casserole is a crowd-pleasing, family-friendly meal that combines savory ground beef, frozen diced potatoes, and creamy cheese sauce into one irresistible bake. It’s easy to prep, freezer-friendly, and makes great leftovers. Perfect for busy weeknights or weekend comfort food.


Ingredients

1 pound ground beef

4 cups frozen diced potatoes (hash browns)

2 cups shredded sharp cheddar cheese

1 can (10.5 ounces) cream of mushroom soup

1 cup sour cream

1 medium onion, chopped

1/2 cup chopped carrots (optional)

1/2 cup chopped celery (optional)

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon garlic powder


Instructions

1. Brown the ground beef in a large skillet over medium heat until no longer pink. Drain any excess grease and season with salt, pepper, and garlic powder.

2. In a large mixing bowl, combine the browned beef, frozen diced potatoes, cream of mushroom soup, sour cream, chopped onion, and optional carrots and celery. Stir until evenly mixed.

3. Preheat the oven to 375°F (190°C). Grease a 9×13-inch baking dish.

4. Pour the casserole mixture into the prepared dish and spread it evenly with a spatula.

5. Sprinkle shredded cheddar cheese generously over the top.

6. Cover with foil and bake for 40 minutes.

7. Remove foil and bake for an additional 10–15 minutes until cheese is golden and bubbly.

8. Let the casserole rest for 5–10 minutes before serving.

Notes

To lighten it up, use Greek yogurt instead of sour cream and reduced-fat cheese.

Add chopped bell peppers or jalapeños for extra flavor and a kick of heat.

For a crispier top, broil the casserole for 2–3 minutes after baking.
