Description

Cheesy Beef Enchilada Tortellini is the perfect fusion of Tex-Mex boldness and Italian comfort. It’s a one-pan skillet meal made with seasoned ground beef, cheese-filled tortellini, and a creamy enchilada sauce that wraps every bite in irresistible richness. Easy enough for weeknights, cozy enough for weekends.


Ingredients

1 lb ground beef

9 oz cheese tortellini (refrigerated or frozen)

2 cups enchilada sauce

4 oz cream cheese

1 cup shredded cheddar or Mexican blend cheese

1/2 cup diced onions

2 cloves garlic, minced

1/2 tsp salt

1/4 tsp black pepper

2 tbsp chopped fresh cilantro (optional)

Sour cream (for topping, optional)


Instructions

1. In a large skillet over medium heat, cook ground beef with diced onions until browned and onions are softened. Drain any excess grease.

2. Add minced garlic, salt, and pepper. Stir in the enchilada sauce and let simmer for 2–3 minutes.

3. Stir in the cream cheese until it’s fully melted into the sauce and smooth.

4. Fold in the cheese tortellini, ensuring each piece is coated. If using refrigerated tortellini, cover and cook for 3–4 minutes.

5. Sprinkle shredded cheese over the skillet and cover with a lid. Let it sit for 2 minutes until the cheese is melted and gooey.

6. Garnish with fresh cilantro and a dollop of sour cream if desired. Serve hot.

Notes

For frozen tortellini, cook it separately and stir in just before adding the cheese topping to prevent sogginess.

You can mix half cream cheese and half sour cream for a lighter sauce without losing richness.

Add 1/4 tsp smoked paprika or chili powder if you want a deeper enchilada flavor.
