Description

Golden, crispy, and packed with flavor, these Cheesy Beef Chimichangas are stuffed with seasoned ground beef and melty cheese, then fried or baked to perfection. A hearty, customizable dinner everyone will love!


Ingredients

1 lb ground beef

1 cup shredded cheese (Mexican blend, cheddar, or Monterey Jack)

1 small onion, diced

2 cloves garlic, minced

2 tbsp taco seasoning

1/2 cup tomato sauce or salsa

6 large flour tortillas

Vegetable oil, for frying

Optional toppings: sour cream, guacamole, fresh cilantro, diced tomatoes


Instructions

  1. In a skillet over medium heat, brown the ground beef. Drain excess grease.
  2. Add onion and garlic; cook until softened.
  3. Stir in taco seasoning and tomato sauce; cook 2–3 minutes, then remove from heat.
  4. Lay out tortillas. Spoon beef mixture in the center, top with cheese, fold sides, and roll up tightly.
  5. Heat oil in a skillet. Fry chimichangas seam-side down until golden, about 2–3 minutes per side. Alternatively, brush with oil and bake at 400°F (200°C) for 20–25 minutes.
  6. Serve hot with desired toppings.
