Ingredients

1215 fresh strawberries, hulled

8 oz (225g) cream cheese, softened

¼ cup powdered sugar

½ teaspoon vanilla extract

¼ teaspoon lemon juice (optional, for extra tang)

¼ cup graham cracker crumbs

1 tablespoon melted butter


Instructions

  1. Prepare the Strawberries: Rinse the strawberries thoroughly and pat them dry. Cut off the tops and use a small spoon or melon baller to hollow out the center of each strawberry.
  2. Make the Cheesecake Filling: In a mixing bowl, beat the softened cream cheese, powdered sugar, vanilla extract, and lemon juice (if using) until smooth and creamy. Transfer to a piping bag or a resealable plastic bag with the corner snipped off.
  3. Fill the Strawberries: Pipe the cheesecake mixture into each hollowed-out strawberry, filling them generously.
