Description

A comforting dish made with delicate crepes filled with sweet, creamy cheese and lightly fried to golden perfection. Serve with fresh raspberries, powdered sugar, or sour cream for a delightful start to your day.


Ingredients

1 cup all-purpose flour

3 large eggs

1 cup milk

2 tablespoons sugar (divided)

Pinch of salt

2 tablespoons unsalted butter (for cooking crepes and frying)

1/2 teaspoon vanilla extract

1 cup farmer’s cheese

4 oz cream cheese, softened

Fresh raspberries (for serving)

Powdered sugar (for garnish)

Fresh mint leaves (optional, for garnish)


Instructions

  1. In a blender, combine flour, eggs, milk, 1 tablespoon sugar, and salt. Blend until smooth. Let the batter rest for 30 minutes.
  2. Heat a non-stick skillet over medium heat and lightly butter it. Pour in 1/4 cup batter, swirl to coat, and cook until golden. Flip and cook the second side. Repeat for remaining batter.
  3. In a bowl, mix farmer’s cheese, cream cheese, 1 tablespoon sugar, vanilla extract, and a pinch of salt until smooth.
  4. Place a spoonful of filling on each crepe, fold the bottom over, tuck in the sides, and roll.
  5. Melt butter in a skillet and fry blintzes seam-side down until golden and crisp on both sides.
  6. Serve warm with raspberries, powdered sugar, and optional mint garnish
