This Cheddar Bay Biscuit Seafood Pot Pie combines creamy seafood filling with buttery, cheesy biscuit topping for the ultimate comfort food dish. With shrimp, scallops, and a luscious Old Bay-seasoned sauce, it’s perfect for cozy dinners and make-ahead meals alike.
Ingredients
1 pound shrimp, peeled and deveined
8 ounces scallops
1 cup frozen peas and carrots
1 small onion, diced
2 cloves garlic, minced
4 tablespoons butter
3 tablespoons all-purpose flour
1 cup seafood or chicken broth
1 cup heavy cream
1 ½ teaspoons Old Bay seasoning
1 packet Cheddar Bay biscuit mix
¾ cup shredded cheddar cheese
⅔ cup milk
2 tablespoons fresh parsley, chopped
Instructions
1. Preheat oven to 400°F (200°C).
2. In a large oven-safe skillet, melt butter over medium heat. Add diced onion and garlic; sauté until softened.
3. Sprinkle flour over the onions and stir for 1 minute to cook off the raw taste.
4. Slowly whisk in broth and cream. Simmer until thickened.
5. Add Old Bay seasoning, peas and carrots, shrimp, and scallops. Simmer for 3–4 minutes, just until seafood is slightly opaque. Remove from heat.
6. In a mixing bowl, combine Cheddar Bay biscuit mix, shredded cheddar, and milk until just combined.
7. Use a scoop to drop biscuit dough evenly over the seafood mixture.
8. Bake for 18–22 minutes, or until biscuits are golden and filling is bubbling.
9. Sprinkle with fresh parsley. Let rest 5 minutes before serving.
Notes
Do not overbake the biscuits or they will become dry—golden brown is your cue to remove from the oven.
If using frozen seafood, thaw and pat dry thoroughly before adding to the filling.
For an extra cheesy crust, sprinkle a little cheddar over the biscuit dough before baking.
