This Cattle Drive Casserole is a hearty southwestern-inspired dinner featuring layers of golden cornbread, seasoned beef, sweet corn, and melty cheddar. It’s quick to assemble and baked to bubbly perfection, perfect for weeknight meals or cozy gatherings.
Ingredients
1 lb ground beef
1 small onion, chopped
1 green bell pepper, chopped
1 cup corn (canned or frozen)
1 packet taco seasoning
1 can diced tomatoes with green chilies (10 oz)
1 cup sour cream
1 1/2 cups shredded cheddar cheese
1 box cornbread mix (like Jiffy)
1 egg (for cornbread mix)
1/3 cup milk (for cornbread mix)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
- Prepare cornbread mix with egg and milk as per package instructions. Pour into the baking dish and bake for 15 minutes.
- In a skillet, brown the ground beef over medium heat. Drain excess grease.
- Add chopped onion and bell pepper. Cook until softened.
- Stir in taco seasoning, diced tomatoes with green chilies, and corn. Simmer for 5 minutes.
- Spread sour cream over partially baked cornbread.
- Spoon beef mixture on top of the sour cream layer.
- Sprinkle shredded cheddar over the beef layer.
- Bake for another 15-20 minutes until cheese is melted and bubbly.
- Let rest for 5 minutes. Garnish with extra sour cream or herbs if desired.
