Description

Cajun Sausage & Rice is a bold and creamy one-skillet meal packed with smoky sausage, aromatic vegetables, and the perfect blend of Cajun spices. This comforting dish is easy to make and ideal for both busy weeknights and hearty leftovers.


Ingredients

1 tablespoon olive oil

14 oz smoked sausage, sliced

1 small yellow onion, chopped

1 bell pepper, chopped

2 garlic cloves, minced

1 cup long-grain rice, uncooked

2 cups chicken broth

1 tablespoon Cajun seasoning

1/3 cup heavy cream

Salt and black pepper, to taste


Instructions

1. Heat olive oil in a large skillet over medium-high heat. Add sausage slices and cook until browned. Remove and set aside.

2. In the same skillet, sauté onion and bell pepper until soft. Add garlic and cook for 1 minute.

3. Stir in the rice and toast it for 2 minutes.

4. Add chicken broth and Cajun seasoning. Return sausage to the pan. Cover and simmer on low for 18–20 minutes.

5. Uncover, stir in heavy cream, and adjust seasoning with salt and pepper. Simmer briefly to thicken.

6. Garnish with parsley or green onions and serve hot.

Notes

Toasting the rice before simmering helps develop a nutty flavor and prevents mushiness.

For extra heat, stir in a pinch of cayenne or a few dashes of hot sauce before serving.

Use coconut cream for a dairy-free version that still keeps the dish rich and creamy.
