This Cajun Potato Soup is a cozy, one-pot meal that combines creamy potatoes, spicy Cajun seasoning, and smoky bacon. Finished with tangy sour cream and melted cheddar, it’s comfort food with bold flavor.
Ingredients
5–6 Yukon Gold or red potatoes, peeled and diced
1 medium onion, chopped
3 cloves garlic, minced
6 strips bacon, chopped
4 cups chicken broth
2 tablespoons Cajun seasoning (adjust to taste)
1 cup heavy cream
1 1/2 cups shredded cheddar cheese
1/2 cup sour cream
3 green onions, sliced
2 tablespoons butter
Salt and pepper to taste
Instructions
- Peel and dice potatoes. Chop onion and mince garlic. Set green onions aside for garnish.
- In a large pot, cook bacon over medium heat until crispy. Remove and set aside, leaving 2 tbsp of drippings.
- Add butter to the pot. Sauté onion and garlic until translucent.
- Add potatoes, chicken broth, and Cajun seasoning. Bring to a boil, reduce heat, and simmer for 15-20 minutes until potatoes are tender.
- Lower heat. Stir in cream and cheddar until melted and creamy. Season with salt and pepper.
- Serve hot, topped with sour cream, bacon, extra cheddar, and green onions.
