Description

This Butter Chicken Skillet Texas Roadhouse Style brings together the best of both worlds: bold Indian spices and hearty skillet-style cooking. Featuring juicy marinated chicken simmered in a creamy, tomato-based sauce, this dish is perfect for cozy dinners or impressing guests. It pairs beautifully with rice, naan, or mashed potatoes — and is even better the next day.


Ingredients

1.5 lbs boneless chicken thighs or breasts

1 cup Greek yogurt

1 tablespoon garlic paste

1 tablespoon ginger paste

2 teaspoons garam masala

1 teaspoon turmeric

1 teaspoon chili powder

1.5 cups tomato puree

1 cup heavy cream

4 tablespoons butter (divided)

Salt and pepper to taste

2 tablespoons fresh cilantro, chopped (optional)

Splash of water (if needed to loosen sauce)


Instructions

1. In a mixing bowl, combine Greek yogurt, garlic paste, ginger paste, garam masala, turmeric, chili powder, and salt. Add chicken pieces and coat well. Let marinate for at least 30 minutes or overnight.

2. Heat a cast iron skillet over medium-high heat. Add 2 tablespoons of butter. Sear the marinated chicken on all sides until browned. Cook in batches if necessary. Remove and set aside.

3. In the same skillet, melt the remaining 2 tablespoons of butter. Add garlic and ginger paste. Sauté until fragrant.

4. Stir in the tomato puree, garam masala, turmeric, and chili powder. Simmer for 5-7 minutes until the sauce thickens and deepens in color.

5. Return the seared chicken to the skillet. Stir well to coat in the sauce. Add a splash of water if it’s too thick. Simmer on low for 10 minutes.

6. Pour in heavy cream and stir gently. Simmer for another 2-3 minutes until the sauce is silky and smooth.

7. Taste and adjust seasoning. Top with fresh cilantro if desired. Serve hot with basmati rice, naan, or mashed potatoes.

Notes

Marinating overnight gives the chicken a deeper flavor and keeps it ultra tender when cooked.

If the sauce becomes too thick, just add a tablespoon or two of water to thin it out while simmering.

For a richer flavor, replace part of the butter with ghee — it intensifies the aroma and gives it a traditional touch.
