Ingredients
1 lb boneless chicken breast or thighs
8 oz rotini pasta
1/3 cup buffalo sauce
3 cloves garlic, minced
1 tbsp Cajun seasoning
1 cup heavy cream
3/4 cup grated Parmesan cheese
1/4 cup ranch dressing
2 tbsp butter
1 tbsp olive oil
1/2 tsp salt
1/2 tsp black pepper
Celery sticks for serving (optional)
Instructions
- 1. Dice chicken into bite-sized pieces and toss with olive oil, salt, pepper, and minced garlic.
- Let sit for 10 minutes. In a skillet over medium-high heat, melt butter and cook chicken until golden.
- Add buffalo sauce, stir, and remove from heat.
- Cook rotini pasta in salted boiling water until al dente.
- Drain and reserve a small amount of pasta water.
- In the same skillet, pour in heavy cream, Cajun seasoning, and Parmesan cheese.
- Whisk over low heat until creamy.
- Add ranch dressing.
- Add cooked pasta and chicken into the sauce.
- Toss until everything is well coated and let simmer for 2–3 minutes before serving.
Notes
Use freshly grated Parmesan to avoid a gritty texture in the sauce.
Reserve some pasta water in case the sauce needs thinning.
For extra heat, add a pinch of cayenne to the Alfredo base.
