Description

Buffalo Chicken Lasagna is a spicy, cheesy twist on the classic Italian favorite. Layers of tender lasagna noodles, creamy ricotta, shredded buffalo chicken, and gooey mozzarella come together for a bold and satisfying meal. Perfect for game nights, family dinners, or any gathering where comfort food is a must!


Ingredients

12 lasagna noodles, cooked and drained

2 cups shredded cooked chicken (rotisserie works great)

1 ½ cups buffalo sauce

1 cup ricotta cheese

1 cup ranch or blue cheese dressing

2 cups shredded mozzarella cheese

½ cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

½ teaspoon salt

½ teaspoon black pepper

2 tablespoons chopped fresh parsley (for garnish)


Instructions

  1. Prepare the Buffalo Chicken Mixture: In a bowl, mix the shredded chicken with buffalo sauce until evenly coated. Set aside.
  2. Make the Cheese Filling: In another bowl, combine ricotta cheese, ranch or blue cheese dressing, garlic powder, onion powder, oregano, salt, and black pepper. Mix well.
  3. Cook the Lasagna Noodles: Boil the noodles according to package instructions, drain, and lay them flat to prevent sticking.
  4. Assemble the Lasagna: Preheat oven to 375°F (190°C). Spread a thin layer of the buffalo chicken mixture in a greased 9×13-inch baking dish. Layer with lasagna noodles, ricotta cheese mixture, and shredded mozzarella and Parmesan cheese. Repeat until all ingredients are used, finishing with cheese on top.
  5. Bake: Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10–15 minutes until the cheese is bubbly and golden brown.
  6. Rest and Serve: Let the lasagna sit for 10 minutes before slicing. Garnish with fresh parsley and serve with extra ranch or blue cheese dressing.
