Description

Bruschetta Chicken Pasta is a flavorful, fresh dinner featuring juicy grilled chicken, blistered cherry tomatoes, fresh basil, and garlic-infused olive oil. It combines the charm of classic bruschetta with the comfort of pasta, making it ideal for weeknights or special occasions.


Ingredients

2 boneless skinless chicken breasts

2 cups cherry tomatoes

2 cloves garlic, minced

2 tablespoons olive oil (plus more for grilling)

2 tablespoons fresh basil, torn

1/2 cup grated Parmesan cheese

Salt and pepper to taste

8 oz gemelli or rotini pasta


Instructions

  1. Season the chicken breasts with salt, pepper, olive oil, and optional Italian herbs. Let marinate for 15 minutes.
  2. Grill or pan-sear chicken over medium-high heat for 5–7 minutes per side until cooked. Rest and slice.
  3. Cook pasta in salted boiling water until al dente. Reserve 1/2 cup pasta water and drain.
  4. In a skillet, heat olive oil and sauté garlic for 30 seconds. Add cherry tomatoes and cook until blistered.
  5. Add cooked pasta to the skillet. Toss to coat with oil and tomato juices. Add pasta water if dry.
  6. Plate pasta, top with sliced chicken, basil, and Parmesan. Serve warm.
