Ingredients
2 boneless skinless chicken breasts
2 cups cherry tomatoes
2 cloves garlic, minced
2 tablespoons olive oil (plus more for grilling)
2 tablespoons fresh basil, torn
1/2 cup grated Parmesan cheese
Salt and pepper to taste
8 oz gemelli or rotini pasta
Instructions
- Season the chicken breasts with salt, pepper, olive oil, and optional Italian herbs. Let marinate for 15 minutes.
- Grill or pan-sear chicken over medium-high heat for 5–7 minutes per side until cooked. Rest and slice.
- Cook pasta in salted boiling water until al dente. Reserve 1/2 cup pasta water and drain.
- In a skillet, heat olive oil and sauté garlic for 30 seconds. Add cherry tomatoes and cook until blistered.
- Add cooked pasta to the skillet. Toss to coat with oil and tomato juices. Add pasta water if dry.
- Plate pasta, top with sliced chicken, basil, and Parmesan. Serve warm.
