Description
These homemade Breakfast Sausages are juicy, savory, and perfectly seared with just the right balance of spices. They’re easy to make and freeze beautifully for quick weekday breakfasts. Whether you prefer them spicy or subtly sweet, this recipe is fully customizable and better than store-bought.
Ingredients
1 lb ground pork
1 tbsp brown sugar
1 tsp salt
1/2 tsp black pepper
1 tsp dried sage
1/2 tsp dried thyme
1/4 tsp red pepper flakes (optional)
1/2 tsp garlic powder
1/2 tsp onion powder
2 tbsp water
Instructions
1. In a large mixing bowl, combine ground pork, brown sugar, salt, black pepper, sage, thyme, garlic powder, onion powder, and red pepper flakes. Pour in the water and mix until well incorporated—avoid overmixing.
2. Divide the mixture into small, even portions and shape into flat patties about 2.5 to 3 inches wide.
3. Heat a skillet over medium heat. Place the patties in a single layer and cook for 3–4 minutes per side, or until deeply golden and the internal temperature reaches 160°F.
4. Transfer to a paper towel-lined plate and let rest a few minutes before serving.
5. Store leftovers in the fridge for up to 4 days or freeze for up to 3 months.
Notes
Keep the patties uniform in size to ensure even cooking throughout.
For extra flavor, let the seasoned pork mixture chill in the fridge for 30 minutes before shaping and cooking.
If using leaner meats like turkey, add a teaspoon of oil to the skillet to prevent sticking.
