Ingredients
16 ounces sour cream
1 can Rotel (drained)
1 packet taco seasoning
1 to 1½ cups shredded cheddar cheese
½ cup diced bell peppers (red, yellow, or green)
2 tablespoons chopped green onions (optional)
Crushed red pepper flakes (to taste, optional)
Instructions
1. Add sour cream to a large mixing bowl and stir until smooth.
2. Fold in drained Rotel, taco seasoning, and shredded cheddar until fully combined.
3. Add diced bell peppers and green onions (if using), mixing gently.
4. Adjust spice level by adding crushed red pepper flakes to taste.
5. Transfer the dip to an airtight container and refrigerate for at least 1 hour before serving.
6. Serve cold with tortilla chips, crackers, or fresh veggies.
Notes
For the best flavor, make it the night before and chill overnight.
