Ingredients
1 and 1/2 cups old-fashioned rolled oats
1 and 1/4 cups all-purpose flour
1/2 cup brown sugar (packed)
1/4 tsp salt
3/4 cup unsalted butter (melted)
2 cups blueberries (fresh or frozen)
1/3 cup granulated sugar
2 tsp cornstarch
2 tsp lemon juice
1 tsp lemon zest
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
- In a bowl, mix oats, flour, brown sugar, and salt.
- Stir in melted butter until mixture becomes crumbly.
- Reserve 1 cup of the mixture; press the rest into the bottom of the pan.
- In another bowl, toss blueberries with granulated sugar, cornstarch, lemon juice, and zest.
- Spread the blueberry mix evenly over the crust.
- Sprinkle the reserved oat mixture on top and gently press down.
- Bake for 35–40 minutes or until golden and bubbly.
- Cool completely in pan, then chill before slicing.
