Blueberry Oatmeal Bars

Description

Golden, crumbly, and packed with juicy blueberry filling, these bars are the perfect blend of sweet, tart, and buttery. A chewy oatmeal crust and crumbly topping sandwich a layer of bright, jammy blueberries for a treat that’s ideal for snacking, dessert, or brunch tables.


Ingredients

1 and 1/2 cups old-fashioned rolled oats

1 and 1/4 cups all-purpose flour

1/2 cup brown sugar (packed)

1/4 tsp salt

3/4 cup unsalted butter (melted)

2 cups blueberries (fresh or frozen)

1/3 cup granulated sugar

2 tsp cornstarch

2 tsp lemon juice

1 tsp lemon zest


Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  2. In a bowl, mix oats, flour, brown sugar, and salt.
  3. Stir in melted butter until mixture becomes crumbly.
  4. Reserve 1 cup of the mixture; press the rest into the bottom of the pan.
  5. In another bowl, toss blueberries with granulated sugar, cornstarch, lemon juice, and zest.
  6. Spread the blueberry mix evenly over the crust.
  7. Sprinkle the reserved oat mixture on top and gently press down.
  8. Bake for 35–40 minutes or until golden and bubbly.
  9. Cool completely in pan, then chill before slicing.
