Ingredients
1 and 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup unsalted butter, melted
3/4 cup granulated sugar
2 large eggs
1/2 cup milk
1 teaspoon vanilla extract
1 and 1/4 cups blueberries (fresh or frozen, plus extra for topping)
1 tablespoon flour (for tossing the blueberries)
Instructions
- Preheat oven to 350°F (175°C). Grease or line a 9×5-inch loaf pan.
- In a large bowl, whisk melted butter and sugar. Add eggs, milk, and vanilla. Mix until smooth.
- In another bowl, whisk flour, baking powder, and salt.
- Combine dry ingredients into wet ingredients gently until just mixed.
- Toss blueberries with 1 tablespoon of flour. Fold into the batter.
- Pour batter into the loaf pan. Top with extra blueberries.
- Bake for 55-65 minutes, until a toothpick inserted in the center comes out clean.
- Cool in pan 10-15 minutes, then move to a wire rack. Cool completely before slicing.
