Ingredients
1 lb ground beef (80/20)
8 small flour tortillas
8 slices American cheese
1 cup shredded iceberg lettuce
1/3 cup diced onions
1/3 cup sliced dill pickles
1/2 cup mayonnaise
1 tablespoon yellow mustard
1 tablespoon ketchup
2 teaspoons sweet pickle relish
1 teaspoon white vinegar
1/2 teaspoon garlic powder
1/4 teaspoon paprika
salt and pepper to taste
Instructions
1. In a bowl, whisk together mayonnaise, mustard, ketchup, relish, vinegar, garlic powder, and paprika. Chill the sauce in the fridge while prepping the rest.
2. Divide ground beef into 8 equal balls. Season both sides with salt and pepper.
3. Preheat a cast iron skillet or griddle over medium-high heat.
4. Place a tortilla onto the hot surface. Set one beef ball on top and smash it thin using a spatula or burger press until it nearly covers the tortilla.
5. Cook for 2-3 minutes until the beef edges are crispy and browned. Flip and cook the other side for 1-2 minutes.
6. Immediately add a slice of cheese on top to melt. Remove from heat.
7. Top with shredded lettuce, diced onions, sliced pickles, and a drizzle of Big Mac-style sauce.
8. Serve immediately while hot and crispy.
Notes
Smash while hot—make sure the skillet is preheated for the best sear and crisp edges.
Flour tortillas work better than corn for structure and flavor pairing with the beef.
