Ingredients

1 cup unsalted butter (softened)

1/2 cup powdered sugar

1 3/4 cups all-purpose flour

1/4 cup cornstarch

1 tablespoon fresh lime zest

1 tablespoon lime juice

1 teaspoon vanilla extract

1/4 teaspoon salt

1 cup confectioners’ sugar (for glaze)

2 tablespoons lime juice (for glaze)

Optional: additional lime zest for garnish


Instructions

1. In a large bowl, cream together the softened butter and powdered sugar until light and fluffy.

2. Add the lime zest and vanilla extract to the mixture and blend until combined.

3. In a separate bowl, whisk together the flour, cornstarch, and salt. Gradually mix into the butter mixture to form a soft dough.

4. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

5. Preheat oven to 325°F (160°C). Line a baking sheet with parchment paper.

6. Roll out the dough to 1/4 inch thickness and cut into rounds using a cookie cutter.

7. Place cookies on the prepared baking sheet and bake for 12–15 minutes, until edges are just beginning to turn golden.

8. Let cookies cool completely on a wire rack.

9. In a small bowl, whisk together 1 cup confectioners’ sugar with 2 tablespoons lime juice until smooth.

10. Spoon or dip glaze onto cooled cookies and garnish with more lime zest if desired. Allow glaze to set before serving.

Notes

For the best flavor, use freshly grated lime zest and juice—avoid bottled lime juice.

Chilling the dough is key to preventing spread and ensuring clean cookie edges.

You can freeze the unglazed cookies for up to 2 months and glaze after thawing.
