Ingredients
1 lb ground beef
1 (10 oz) can enchilada sauce (mild or medium)
2 cups uncooked penne pasta
2 cups beef broth (or water)
1 packet taco seasoning
1 1/2 cups shredded cheddar cheese
2 green onions, chopped
Fresh cilantro, chopped
Instructions
- In a large skillet over medium-high heat, brown the ground beef until no pink remains. Drain excess fat.
- Stir in the taco seasoning to coat the beef evenly.
- Add enchilada sauce and beef broth; bring to a simmer.
- Stir in the uncooked penne pasta. Ensure it’s covered by the liquid.
- Cover and cook on medium-low heat for 12–15 minutes, stirring occasionally.
- Once pasta is tender and sauce thickened, top with shredded cheese.
- Cover again for 2–3 minutes until cheese is melted.
- Remove from heat and garnish with chopped green onions and cilantro.
