Ingredients

1 lb ground beef

1 (10 oz) can enchilada sauce (mild or medium)

2 cups uncooked penne pasta

2 cups beef broth (or water)

1 packet taco seasoning

1 1/2 cups shredded cheddar cheese

2 green onions, chopped

Fresh cilantro, chopped


Instructions

  1. In a large skillet over medium-high heat, brown the ground beef until no pink remains. Drain excess fat.
  2. Stir in the taco seasoning to coat the beef evenly.
  3. Add enchilada sauce and beef broth; bring to a simmer.
  4. Stir in the uncooked penne pasta. Ensure it’s covered by the liquid.
  5. Cover and cook on medium-low heat for 12–15 minutes, stirring occasionally.
  6. Once pasta is tender and sauce thickened, top with shredded cheese.
  7. Cover again for 2–3 minutes until cheese is melted.
  8. Remove from heat and garnish with chopped green onions and cilantro.
