Description

This Beef Dorito Casserole layers savory ground beef, melty cheddar cheese, sour cream, and crushed Nacho Cheese Doritos into one bubbly, golden bake. A Tex-Mex inspired comfort dish that’s weeknight-friendly and always a hit with the whole family.


Ingredients

1 pound ground beef

1 packet taco seasoning

1 small yellow onion, diced

1 green bell pepper, diced

1 can Rotel (diced tomatoes with green chilies), drained

1 cup sour cream

1 can cream of mushroom soup (10.5 oz)

2 cups shredded cheddar cheese

4 cups Nacho Cheese Doritos, crushed


Instructions

1. Preheat oven to 350°F (175°C).

2. In a large skillet over medium-high heat, cook ground beef until browned.

3. Add diced onion and bell pepper. Cook until soft, then drain any excess fat.

4. Stir in taco seasoning and Rotel. Simmer for a few minutes to blend the flavors.

5. Remove from heat. Mix in sour cream and cream of mushroom soup until creamy.

6. Lightly grease a 9×13-inch casserole dish.

7. Layer the bottom with half the crushed Doritos.

8. Spoon half of the beef mixture on top. Sprinkle with half the cheddar cheese.

9. Repeat the layers with remaining Doritos, beef mixture, and cheese.

10. Cover with foil and bake for 20 minutes.

11. Uncover and bake another 10 minutes, until bubbly and golden.

12. Let sit 5–10 minutes before serving. Top with green onions, salsa, or more chips if desired.

Notes

Use freshly shredded cheddar for the best melt—pre-shredded often contains anti-caking agents that affect texture.

Letting the casserole rest after baking helps it set for neater slices.

For extra crunch, reserve some fresh Doritos to sprinkle on just before serving.
