Description
A cozy, oven-baked dish featuring seasoned ground beef, tender potatoes, and layers of melty cheese. This casserole is perfect for feeding the whole family or prepping meals ahead.
Ingredients
1 tablespoon olive oil
1 medium onion, diced
2 cloves garlic, minced
1 pound ground beef
1 teaspoon paprika
1 teaspoon salt
½ teaspoon black pepper
4 medium potatoes, peeled and diced
1 cup shredded sharp cheddar cheese
1 cup shredded mozzarella cheese
1 tablespoon chopped fresh parsley or thyme (optional)
Instructions
1. Preheat oven to 375°F (190°C).
2. In a large skillet, heat olive oil over medium heat. Add diced onion and sauté until softened, about 5 minutes.
3. Stir in minced garlic and cook for 1 minute more.
4. Add ground beef to the skillet. Cook until browned and crumbled. Season with paprika, salt, and pepper. Drain excess fat if necessary.
5. In a mixing bowl, toss diced potatoes with a drizzle of olive oil, a pinch of salt, and extra paprika if desired.
6. In a greased 9×13-inch baking dish, layer half of the potatoes, then half of the beef, followed by half of each cheese.
7. Repeat the layers, ending with the remaining cheese on top.
8. Cover the casserole with aluminum foil and bake for 30 minutes.
9. Remove foil and bake for an additional 15–20 minutes, or until the potatoes are tender and the cheese is golden and bubbly.
10. Let rest for 10 minutes before serving. Garnish with fresh parsley or thyme if using.
Notes
Cut your potatoes into uniform sizes to ensure even baking throughout the dish.
For extra crispy topping, broil the casserole for 2–3 minutes after baking.
You can prep this dish a day in advance and store it in the fridge before baking. Just add 10–15 minutes to the cook time.
