Description

These Beef and Pepper Rice Bowls are a comforting, one-skillet meal packed with sautéed ground beef, colorful bell peppers, onions, and garlic, all simmered in savory seasonings and served over warm, fluffy rice. It’s a quick and satisfying dinner ideal for busy nights or meal prep days.


Ingredients

1 pound ground beef

1 green bell pepper, diced

1 red bell pepper, diced

1 yellow onion, diced

2 cloves garlic, minced

3 tablespoons soy sauce

1 teaspoon paprika

1 teaspoon salt

1/2 teaspoon black pepper

3 cups cooked white rice


Instructions

1. Dice the onion and bell peppers, and mince the garlic. Set aside.

2. In a large nonstick skillet over medium-high heat, cook the ground beef, breaking it up with a spatula. Drain excess fat if needed.

3. Add the diced onion and minced garlic to the skillet. Cook for 2–3 minutes until fragrant and golden.

4. Stir in the diced green and red bell peppers. Cook for 5–7 minutes until slightly softened.

5. Season with paprika, salt, and black pepper. Pour in soy sauce and stir well to combine. Simmer for 3–4 more minutes.

6. Serve hot over the cooked white rice. Garnish as desired.

Notes

Store leftovers in airtight containers with rice separated for better texture during reheating.

Make it spicier by adding red pepper flakes, jalapeños, or hot sauce in Step 5.

This dish freezes well — just freeze the beef and pepper mixture alone for up to 2 months.
