Ingredients
1 pound ground beef
1 cup elbow macaroni
1 medium yellow onion, diced
3 garlic cloves, minced
4 cups beef broth
1 can (15 ounces) tomato sauce
1 can (14.5 ounces) diced tomatoes with juice
1 teaspoon Italian seasoning
1 teaspoon salt (or to taste)
1/2 teaspoon black pepper
2 tablespoons chopped fresh parsley (optional)
Instructions
1. In a large pot or Dutch oven over medium-high heat, brown the ground beef, breaking it up with a spoon. Drain excess fat if needed.
2. Add the diced onion and minced garlic to the pot. Cook for 3-4 minutes until softened and fragrant.
3. Stir in the beef broth, tomato sauce, and diced tomatoes (with juice). Add Italian seasoning, salt, and pepper. Bring to a gentle boil.
4. Add the elbow macaroni to the pot. Reduce heat to a simmer and cook for 10–12 minutes, or until the pasta is tender.
5. Taste the soup and adjust seasoning as needed. Stir in chopped parsley before serving for a fresh finish.
Notes
For freezer storage, omit the pasta and add freshly cooked macaroni when reheating to avoid soggy noodles.
Make it your own by adding vegetables like carrots, peas, or corn during the onion sauté step.
To reduce salt, use low-sodium broth and no-salt-added tomato products, then adjust seasoning to taste.
