Description
BBQ Pulled Chicken on the Stovetop is a fast, flavorful dish made with tender chicken breasts simmered in smoky BBQ sauce. Perfect for sandwiches, tacos, or rice bowls, ready in under an hour.
Ingredients
2 tablespoons olive oil
1.5 pounds boneless skinless chicken breasts
1 teaspoon smoked paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt
0.5 teaspoon black pepper
1 cup BBQ sauce
0.5 cup chicken broth
1 tablespoon brown sugar
1 tablespoon apple cider vinegar
Instructions
1. Heat olive oil in a large pot over medium-high heat.
2. Season chicken with smoked paprika, garlic powder, onion powder, salt, and black pepper.
3. Sear chicken on both sides for 2 to 3 minutes until golden.
4. Lower heat, add BBQ sauce, chicken broth, brown sugar, and apple cider vinegar. Stir and cover.
5. Simmer for 20 to 25 minutes until chicken is tender.
6. Remove chicken, shred with two forks, return to pot.
7. Simmer 5 to 10 more minutes to thicken sauce.
8. Adjust seasoning and serve.
Notes
For extra smokiness, add half teaspoon chipotle powder or liquid smoke.
Keep lid on while simmering to prevent dryness.
Freeze leftovers with sauce for easy future meals.
