Ingredients
2 pounds Yukon Gold or small yellow potatoes
1/3 cup olive oil
1/4 cup freshly squeezed lemon juice (about 2 lemons)
4 garlic cloves, minced
1 tablespoon dried oregano
1/2 cup chicken or vegetable broth
Salt and pepper, to taste
Chopped fresh parsley, for garnish
Instructions
- Preheat oven to 400°F (200°C).
- Wash and halve (or quarter) the potatoes; pat them dry.
- In a bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper.
- Toss the potatoes in the marinade until well coated.
- Arrange potatoes cut-side down in a baking dish; pour broth around them.
- Roast for 45-50 minutes, flipping once halfway, until golden and tender.
- Drizzle with extra lemon juice and sprinkle with fresh parsley before serving
