Description

These Asian Sesame Noodles come together in just minutes and deliver a satisfying punch of umami, crunch, and color. Tossed in a savory sesame-garlic sauce with crisp vegetables, they’re perfect for lunch, dinner, or meal prep. Serve warm or cold with your favorite protein.


Ingredients

8 oz spaghetti or lo mein noodles

3 tbsp soy sauce

2 tbsp toasted sesame oil

1 tbsp rice vinegar

1 tbsp honey or maple syrup

2 cloves garlic, minced

1 tsp fresh ginger, grated

1 red bell pepper, thinly sliced

1 medium carrot, julienned

2 green onions, sliced

1 tbsp sesame seeds

2 tbsp fresh cilantro (optional), chopped


Instructions

1. Cook noodles according to package instructions. Drain and rinse under cold water to prevent sticking. Set aside.

2. In a bowl, whisk together soy sauce, sesame oil, rice vinegar, honey, garlic, and ginger until well combined.

3. In a large skillet or wok, heat a splash of oil over medium heat. Add bell pepper and carrot. Sauté for 2–3 minutes until tender-crisp.

4. Add noodles to the skillet and pour the sauce over them. Toss with tongs or chopsticks until evenly coated and heated through.

5. Remove from heat and garnish with sesame seeds, green onions, and cilantro if using. Serve warm or chilled.

Notes

Rinsing the noodles in cold water is key to preventing clumps—don’t skip it.

Add more sesame oil before serving cold to revive the silky texture.

For added protein, top with grilled tofu, shrimp, or sliced chicken.
