Ingredients
1 ½ cups all-purpose flour
2 teaspoons baking powder
2 tablespoons brown sugar
1 teaspoon cinnamon
¼ teaspoon nutmeg
¼ teaspoon salt
2 large eggs
1 ¼ cups milk
¼ cup melted butter
1 teaspoon vanilla extract
2 medium apples, peeled and diced
1 tablespoon lemon juice
2 tablespoons granulated sugar
1 teaspoon cinnamon (for apples)
1 tablespoon cornstarch
2 tablespoons water (to dissolve cornstarch)
Instructions
1. In a skillet, combine apples, granulated sugar, cinnamon, lemon juice, and a splash of water. Cook over medium heat for 8–10 minutes until tender.
2. Mix cornstarch with water, add to apple mixture, and cook until thickened. Set aside.
3. In a large bowl, whisk together flour, baking powder, brown sugar, cinnamon, nutmeg, and salt.
4. In a separate bowl, beat the eggs, then mix in milk, melted butter, and vanilla extract.
5. Combine wet and dry mixtures. Stir until just combined—don’t overmix.
6. Preheat and lightly grease your waffle iron.
7. Pour batter into waffle iron and cook until golden brown and crisp.
8. Serve waffles topped with warm apple filling. Add vanilla ice cream or caramel if desired.
Notes
Use a Belgian waffle iron for deep pockets that hold more filling.
Don’t overmix the batter—it should be slightly lumpy for fluffy waffles.
Reheat leftovers in a toaster for a crisp texture.
