Ingredients

2 cups diced apples (Granny Smith or Honeycrisp)

1/2 cup brown sugar

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg

1 teaspoon vanilla extract

1 tablespoon butter

6 small flour tortillas

1/2 cup caramel sauce

1/2 cup shredded cheddar cheese (optional)

1/4 cup chopped pecans (optional)


Instructions

  1. Prepare the apple filling: In a medium saucepan, melt the butter over medium heat. Add diced apples, brown sugar, cinnamon, nutmeg, and vanilla extract. Stir and cook for 5–7 minutes until apples soften and the mixture becomes syrupy. Remove from heat.
  2. Assemble the enchiladas: Lay out the tortillas and spoon the apple mixture into the center of each one. If using, sprinkle with shredded cheddar cheese. Roll the tortillas tightly and place them seam-side down in a greased baking dish.
  3. Add the caramel sauce: Drizzle caramel sauce evenly over the rolled tortillas, ensuring they are well coated. If desired, sprinkle chopped pecans on top.
  4. Bake: Cover the dish with foil and bake at 350°F (175°C) for 20 minutes. Remove the foil and bake for another 5–10 minutes until the tortillas are lightly golden and the caramel sauce is bubbling.
  5. Serve: Let the enchiladas cool slightly before serving. Top with extra caramel sauce, vanilla ice cream, or whipped cream for the perfect finishing touch.
