Description

This Apple Cinnamon French Toast Casserole combines the warmth of cinnamon, the tartness of green apples, and the creamy softness of a custard-soaked bread base. With golden, crisp tops and tender interiors, it’s a comforting, make-ahead breakfast perfect for cozy mornings or festive brunches.

Ingredients

6 cups day-old brioche or challah bread, cubed

5 large eggs

1 cup whole milk

1 cup heavy cream

1/2 cup brown sugar

2 teaspoons vanilla extract

1 1/2 teaspoons ground cinnamon

1/4 teaspoon ground nutmeg

2 green apples, peeled and diced

2 tablespoons butter, for greasing and topping

Instructions

1. Cube the bread into 1-inch pieces. If too fresh, let air dry for an hour.

2. In a bowl, whisk together eggs, milk, heavy cream, brown sugar, vanilla, cinnamon, and nutmeg until smooth.

3. Peel and dice the apples, then toss them with a bit of cinnamon and brown sugar.

4. Grease a 9×13 baking dish with butter. Add half the bread, layer half the apples. Repeat.

5. Pour the custard over the top evenly. Press down lightly to soak. Let rest 30 minutes or refrigerate overnight.

6. Preheat oven to 350°F (175°C). Cover with foil and bake 30 minutes. Uncover and bake another 20 minutes until golden.

7. Let cool slightly and serve warm with maple syrup or powdered sugar.

Notes

Letting the bread dry out prevents a soggy texture—day-old bread is ideal.

Refrigerating overnight deepens flavor and softens the custard blend.

Don’t skip the foil cover during the first half of baking—it ensures even cooking and prevents burning.
