Description

These Apple Cinnamon Breakfast Quesadillas are a sweet, crisp, and comforting morning indulgence that brings the warm flavors of apple pie into an easy-to-make, skillet-to-table breakfast. With tender spiced apples, creamy filling, and golden tortillas, they’re the perfect fusion of cozy and crisp.


Ingredients

2 large tart apples (Granny Smith or Honeycrisp), peeled and sliced thin

2 tablespoons butter

3 tablespoons brown sugar

1 teaspoon cinnamon

1 teaspoon vanilla extract (optional)

⅛ teaspoon nutmeg or allspice (optional)

4 ounces cream cheese or mascarpone

4 medium flour tortillas


Instructions

1. In a small saucepan, melt butter over medium heat. Add sliced apples, brown sugar, and cinnamon (plus nutmeg and vanilla if using). Cook for 6–8 minutes until apples are softened and caramelized. Stir occasionally to prevent burning.

2. Lay flour tortillas on a flat surface. Spread cream cheese or mascarpone over one half of each tortilla.

3. Spoon the warm apple mixture over the cream cheese. Fold the tortillas in half and press gently to seal.

4. Heat a nonstick skillet over medium heat. Toast each folded tortilla for 2–3 minutes per side until golden brown and slightly crisp. Use a spatula to gently press down as they cook.

5. Remove from the skillet, slice into wedges, and serve warm. Optionally, dust with powdered sugar or drizzle with maple syrup.

Notes

For ultra-crisp tortillas, make sure your skillet is hot before toasting and don’t overcrowd the pan.

Make the apple filling in advance and store it for up to 3 days—perfect for weekday breakfast prep.

Add a pinch of salt to the apple mixture to enhance and balance the sweetness naturally.
