Description

A bold, comforting West African dish, African Peanut Soup blends creamy peanut butter, hearty sweet potatoes, aromatic spices, and leafy greens into a warm, nourishing bowl. This one-pot wonder is perfect for cozy dinners and makes excellent leftovers.


Ingredients

1 tablespoon vegetable oil

1 medium onion, chopped

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

2 tablespoons tomato paste

1 teaspoon chili flakes (adjust to taste)

1 teaspoon salt

2 medium sweet potatoes, peeled and diced

1 can (14 oz) crushed tomatoes

4 cups vegetable or chicken broth

3/4 cup natural peanut butter (unsweetened)

4 cups chopped kale or collard greens

1/4 cup roasted peanuts, chopped (for garnish)

Fresh cilantro (optional, for garnish)


Instructions

1. Heat oil in a large soup pot over medium heat. Sauté chopped onion until soft, about 5 minutes.

2. Add garlic and ginger; cook for another 1–2 minutes until fragrant.

3. Stir in tomato paste, chili flakes, and salt. Cook for 2–3 minutes to develop flavor.

4. Add diced sweet potatoes, crushed tomatoes, and broth. Bring to a boil, then reduce to a simmer and cover.

5. Cook for 15 minutes or until sweet potatoes are tender.

6. In a separate bowl, whisk peanut butter with a cup of hot broth until smooth. Stir it back into the pot.

7. Add chopped greens and simmer uncovered for 10 more minutes.

8. Adjust seasoning to taste. Serve hot with roasted peanuts and cilantro.

Notes

Use natural peanut butter for the best consistency and flavor—avoid sweetened types.

For extra creaminess, blend half the soup before adding the greens.

This soup freezes well. Add greens only after reheating for freshness.
