Ingredients

12 graham crackers, crushed

5 tablespoons unsalted butter, melted

16 ounces cream cheese, softened

1/2 cup granulated sugar

2 large eggs

1/4 cup sour cream

1 teaspoon vanilla extract

3/4 cup heavy cream

1/4 cup powdered sugar

Green food coloring, a few drops

Sprinkles and sugar stars, for decoration

6 mini sugar cones or waffle cones (optional)


Instructions

1. Preheat oven to 325°F (163°C). Line a mini cheesecake pan or muffin tin with liners.

2. Combine crushed graham crackers and melted butter until it resembles wet sand. Press into each liner to form crusts. Bake for 5 minutes. Let cool.

3. Beat cream cheese until smooth using a mixer. Add sugar and mix until incorporated. Beat in eggs one at a time. Mix in sour cream and vanilla until smooth.

4. Spoon the batter over the cooled crusts. Tap pan to remove air bubbles. Bake 15–18 minutes until centers are just set. Cool completely, then chill for at least 2 hours.

5. Whip heavy cream with powdered sugar to stiff peaks. Tint part with green food coloring. Pipe green cream onto cheesecakes in swirled tree shapes. Decorate with sprinkles and sugar stars.

6. Chill again briefly to set the decorations. Serve cold.

Notes

For clean edges, run a knife around the cheesecake before removing from the pan.

Use very cold heavy cream for best whipped tree texture.

Avoid overbaking—centers should jiggle slightly when removed from the oven.
